ENCHILADAS 
1 lg can enchilada sauce
1 1/2 lbs ground beef
1 lg onion
1 pack tortillas
3 cups shredded taco cheese

Preheat oven to 350°F.

Brown meat and onion, drain. Spread a thin layer of refried beans on tortillas to act as "glue". Add meat and onion mixture, roll up and place in a greased 9 x 13 casserole dish. Repeat until pan is full.

Pour enchilada sauce over rolled tortillas. Cover with cheese.

Bake for 20-25 minutes (until brown) Serve with a side of Spanish rice and top with sour cream.
