SWEET POTATO BALLS 
1 (12 oz.) can sweet potatoes or yams, drained
1 egg, separated
1/2 tsp. salt
1/2 tsp. cinnamon
2 tbsp. melted butter
6 large marshmallows
Crushed corn flakes

In a large mixing bowl, mash potatoes thoroughly; add egg yolk, salt, cinnamon and butter, mixing well. Shape 6 balls by molding sweet potato mixture around each marshmallow. Beat egg white until foamy. Roll balls in egg white, then in corn flakes. Place in a baking dish.

Bake at 350°F for 10 to 12 minutes until golden brown.

Serves 6.
