ARTICHOKE NIBBLES 
2 (6 oz.) jars marinated artichokes
1 sm. onion, finely chopped
1 clove garlic, finely chopped
4 eggs
1/4 c. dry bread crumbs
1/8 tsp. each pepper, oregano, liquid hot pepper
1 1/2 c. grated Cheddar cheese
2 tbsp. chopped parsley

Drain marinade from 1 jar of chokes into frying pan, drain other chokes well and chop and set aside. Add onion and garlic to pan and saute about 5 to 10 minutes. In a bowl beat eggs with fork. Add crumbs, pepper, oregano and hot pepper.

Stir in cheese, parsley, chokes, garlic. Mix well and turn into greased 7 x 11 or 8 x 8 inch pan. Bake at 325 degrees for 30 minutes or until set. Cool in pan and cut into 1 inch squares. Serve hot or cold. Can reheat about 1 minute in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
