ZEBA'S SWEDISH MEATBALLS 
2 c. soft bread crumbs, firmly packed
3/4 c. milk
2 tbsp. minced onion
1/4 c. butter
1 lb. ground beef
1/4 tsp. nutmeg
1/4 tsp. paprika
1/2 tsp. salt
1 egg, slightly beaten
1/2 c. light cream (optional)

Combine bread crumbs and milk and let stand for 10 minutes. Cook onion in butter over low heat until soft but not brown. Combine beef, nutmeg, paprika, salt, egg, bread crumb mixture and onion. Shape in small (1-inch) balls and chill at least 1 hour.

Roll meat balls in flour. Cook in a little vegetable oil, turning to brown on all sides. OPTIONAL: Add 1/2 cup light cream, cover and cook for 5 minutes.
