SANTA FE CORNBREAD 
3 (8 oz.) pkgs. cornbread mix
1 tsp. salt
1 c. chopped green onions
3 tbsp. chopped fresh cilantro
1 c. sour cream
3 tbsp. jalapeno (chopped) or less
1 c. cottage cheese
3/4 c. butter
4 eggs
4 oz. shredded Cheddar cheese
1 (16 oz.) pkg. corn with red and green peppers

Heat oven to 400. Grease 13x9x2 inch pan. In large bowl, combine all ingredients, mix well. Spread in pan. Bake at 400 for 30-40 minutes or until toothpick comes out clean and top is golden brown. 16-18 servings.
