COCONUT CUSTARD PIE 
6 eggs
1 stick melted butter
2 c. sugar
2/3 c. buttermilk
1/4 tsp. salt
1 tbsp. vanilla
1 c. coconut

Beat eggs; add sugar, salt, melted butter, and buttermilk. Fold in coconut. Pour in unbaked pie shells. Bake at 350 degrees for 30 minutes or until center doesn't shake and top is brown. Makes 2 (8 inch) pies.
