BEEF ENCHILADA RICE 
1/2 lb. lean beef diced (I use the beef strips for stir fry)
1 tbsp. vegetable oil
1/3 c. diced onions
1 clove garlic
1 1/2 tsp. chili powder (use less if you don't want it so spicy)
1/2 tsp. oregano
1 qt. tomato juice
3/4 c. water
1 1/2 c. minute rice

Brown beef in oil. Add onions, garlic, oregano, chili powder and salt. Saute onions and garlic until tender. Then add tomato juice and water. Bring to a good boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes.
