FRESH STRAWBERRY PIE | |
1 1/2 tsp. Knox gelatine 3 1/2 tbsp. cold water 3 eggs, separated 3 1/2 tbsp. lemon juice 2/3 c. sugar 1/2 tsp. salt 1 pt. fresh strawberries 1/2 pt. whipping cream Soak gelatine in the cold water and allow to stand until other mixture is prepared. Put egg yolks, lemon juice and 1/3 cup sugar in top of double boiler and beat with rotary beater. Place over boiling water and beat until light and creamy. Remove from fire and add soaked gelatin and stir until dissolved. Cover and cool until it begins to thicken. Add salt to egg whites, beat until stiff and dry. Add remaining 1/3 cup sugar. Beat until smooth. Fold into egg yolk mixture. Slice some berries into baked pie shell. Pour lemon mixture over berries. Chill. When chilled, cover with whipped cream. Decorate with whole berries. |
