PORK CHOPS WITH STUFFING 
1/2 c. butter
1 c. chopped onion
1 c. chopped celery
8 c. soft bread crumbs, sliced in 1/2" cubes
2 tbsp. dried parsley flakes
1/2 tsp. salt
1/2 tsp. rubbed sage
1/2 tsp. black pepper
1/2 c. hot water
6 pork chops
Salt, pepper
4 tbsp. butter
4 tbsp. whole wheat flour
1 c. milk

Melt butter in skillet; saute onion and celery in it until soft (about 10 minutes). Turn off heat. Add bread cubes (whole wheat is tasty), parsley flakes, sage, salt, pepper, and hot water. Mix lightly. Spread mixture in greased casserole. Seas chops with salt and pepper and arrange on top of stuffing. Make white sauce with the last 3 ingredients and season to taste. Spoon sauce over chops. Cover. Bake at 350 degrees for 45 minutes. Excellent served with greens. Serves 4.
