MUSHROOM FRIHATA 
1 c. sliced mushrooms (1/2 lb.)
2/3 c. chopped onion
1 c. chopped zucchini
2/3 c. chopped green pepper
1 tsp. minced garlic
2 tbsp. vegetable oil
5 eggs
1/3 c. cream
Dash of pepper
1/2 tsp. salt
1 1/2 c. soft bread cubes
8 oz. cream cheese, cut in 1/2 inch cubes

Saute mushrooms, onion, zucchini, green pepper, and garlic in oil until crisp and tender. Set aside. Beat eggs, cream, salt, and pepper. Add mushroom mixture, bread cubes, cream cheese, and Cheddar cheese. Stir together but lightly, so cream cheese cubes are intact. Pour into a well greased 9 inch pie plate. Bake at 350 degrees for 45 minutes. Cool 5 to 10 minutes before cutting. Put some sauteed mushrooms on top.
