IMPOSSIBLE CHEESEBURGER PIE 
1 lb. ground beef
3/4 c. chopped onions
1/4 tsp. salt
1/4 tsp. pepper
3/4 c. Jiffy baking mix
1 1/2 c. milk
3 eggs
2 tomatoes, sliced
1 c. shredded Cheddar or Velveeta cheese

Heat oven to 400 degrees. Grease pie plate (10 x 1 1/2 inches). Brown beef and onion in skillet. Drain and add salt and pepper; spread in pie plate.

Beat Jiffy mix, milk and eggs with wire whisk or hand beater until almost smooth (about 60 seconds). Pour into pie plate.

Bake 25 minutes. Top with tomatoes and cheese. Bake until knife comes out clean (from center) 5-8 minutes. Cool about 5 minutes. Serves 6-8. Enjoy!
