AUNT CHRISTINE'S NUTTY SWEET
POTATO SOUFFLE
 
3 c. mashed sweet potatoes
1 1/4 c. sugar
3 eggs, well beaten
1 stick butter, melted
1 tsp. vanilla
2 tsp. baking powder
1/2 c. raisins
1/2 can coconut, optional

TOPPING:

3 c. cornflakes, crushed fine
1/2 c. light brown sugar
1/2 c. pecans, cut up
2/3 stick butter, melted

Mash potatoes, add well beaten eggs, sugar and remainder of ingredients. Mix well. Pour into a glass casserole dish about 13 x 9.

For topping, combine corn flakes, sugar, pecans and butter. Sprinkle over top of souffle. Bake for about 25 minutes at 375 degrees.
