14 lbs. mixed fruit cake pieces 1 lb. cherries 1/2 lb. citron pieces 1/2 lb. dark raisins 1 lb. light raisins 1 1/2 lb. dates, chopped 1 lb. pecan pieces Brandy 5 c. flour 5 tsp. baking powder 1 tsp. salt 10-12 eggs 2 1/4 c. sugar 1 1/2 c. white corn syrup Candied pineapple slices Pecan halves Cherries for decorating Coat all fruit above except this with 's with sifted flour, baking powder and salt. Mix eggs and sugar together and mix with all fruit and flour mixture. Add enough eggs to make fruit sticky. Press mixture into greased foil gift baking tins. Bake at 275 to 300 degrees for 1 1/2 to 2 hours. Cool. Decorate with sliced pineapple rings, pecan halves and cherries. Brush with corn syrup. Add one jigger of brandy to each. Cover with Saran Wrap. Makes 10-15 gift fruit cakes depending on size of tins used. |
