APPLE RAISIN BREAD 
3 c. chopped apples
2 1/2 c. sugar
4 eggs, beaten
2 tsp. cinnamon
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 c. chopped nuts
3 c. flour
1 1/4 c. oil
1 tbsp. plus 1 tsp. vanilla
1 1/2 tsp. salt
1 tsp. cloves
2/3 c. raisins

Heat oven to 325 degrees. Generously grease bottom only of 2 pans (9 x 5 x 3 inches). Beat all ingredients on low speed (scrape bowl often) 1 minute. Beat on medium speed, 1 minute or may be a little more. Bake in 350 degree oven 1 hour or until done. Insert toothpick in center and if done the toothpick will come out clean. Cool 10 minutes. Remove from pans. Cool completely before slicing. I use smaller pans for baking and give as gifts.
