CHEESY ZUCCHINI AND POTATOES 
1 onion, sliced thin
3-4 zucchini, sliced thin
Pinch garlic powder, salt, pepper
6 potatoes (skin on), parboiled
6 oz. shredded cheddar cheese

Saute onions and zucchini in vegetable oil until tender. Peel and slice potatoes. Add to onions and zucchini. Season. Cook until potatoes begin to brown. Top with cheese. Cover until cheese is melted. Serves 6.
