HUSHPUPPIES 
1 c. cornmeal
1 egg
1 c. cracker crumbs
1 med. onion, chopped
Boiling water to thicken to dropping consistency

Roll the crackers to crumbs. Mix the crumbs and cornmeal. Add the egg and onions. Mix. Add the boiling water. Drop from a spoon (the size you want) into the hot grease where fish is fried. Brown. Drain on paper towel. Serve hot with fish dinner. We usually serve these with freezer strawberry jam. The kids like them with the jam.
