ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. grated zucchini
1 tsp. cinnamon
1 c. chopped nuts (pecans)
2 c. flour

Beat sugar, oil and vanilla. Beat eggs until fluffy; then mix with sugar, oil and vanilla. Beat all together until lemon color, stir in zucchini, flour and cinnamon. Add nuts. Bake at 350 degrees for 1 hour. Yield: 2 loaves 9"x5" or 5 mini loaves. Bake 30 minutes.
