POTATO DOUGHNUTS 
1 med. potato (mashed)
2 eggs
1 c. sugar
5 c. flour
1 tsp. baking powder
1 tsp. salt
1 c. milk

1. Mash potato and set aside.

2. Lightly beat eggs and set aside.

3. Mix all dry ingredients.

4. Mix dry ingredients with milk, egg and potato.

5. Roll out and cut with doughnut cutter.

6. Deep fry or use 2 inches of oil in skillet and turn over 1 time.

7. Sprinkle with powdered sugar while still warm.
