CHICKEN SAN FRANCISCO 
Boneless chicken breast fillets
1 tbsp. grated cheese per person
Broccoli spears, steamed (a little crunchy)
Bacon strips, cooked until crisp
1 tbsp. sliced almonds per person
Rice pilaf (your recipe or frozen, prepare per direction on pkg.)
Cheese Sauce

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. grated Cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. paprika
1/2 tsp. dry mustard

Sauce: Melt butter in saucepan. Stir in flour until blended. Add milk slowly. Stir until sauce is smooth and milk slightly bubbles. Reduce heat and cheese, salt, pepper, paprika, and mustard. Stir until cheese melts.

Main Dish: Prepare sauce and rice pilaf. Set aside, keeping both warm. Bread and fry chicken in peanut oil until almost done. Place bed of rice pilaf in baking dish. Top rice with chicken fillets. Top each with 1 broccoli spear, 1 strip bacon, almond slices, and cheese sauce. Bake in 350 degree oven for 5 minutes or until cheese melts. Serve immediately.
