POLYNESIAN SCALLOPS 
1/2 c. diced green pepper
1 tbsp. chopped green onion
1/4 c. sliced water chestnuts
1/4 c. pineapple cubes
1 tsp. Worcestershire sauce
1 tsp. red wine vinegar
1/4 c. pineapple juice
Juice of one lime
1 lb. scallops

Mix all except scallops. Heat on medium heat until the vegetables are tender. Thicken with cornstarch (about 1 teaspoon if desired). Add scallops. Place in a covered dish and bake in a preheated 350 degree oven for 5 minutes. Serve with rice and oriental veggies.
