CHICKEN CASSEROLE 
2-3 c. chicken, diced
4 hard boiled eggs, diced
2 c. cooked rice
1 1/2 c. diced celery
1 sm. onion, chopped fine
1 c. mayo
2 cans cream of mushroom soup
3 oz. slivered almonds (opt.)
2 tbsp. lemon juice
1 tsp. salt
1 c. bread crumbs for top

Top bread crumbs with butter. Serves 8. This may be cut in half and still serves 4 to 6 people. Mix all ingredients together, put in 2 quart casserole and bake at 350 degrees for 45 minutes.
