CASHEW CHICKEN 
3 whole chicken breasts
4-5 green onions
1/2 - 1 c. chicken stock
1/2 tsp. sugar
3-5 tbsp. oil
Bamboo shoots
1/4 lb. mushrooms
1/4 c. soy sauce
2 tbsp. cornstarch
2-3 cloves garlic
1 tbsp. sherry
Water chestnuts
1 pkg. cashew nuts
Water

1. Bone chicken and slice in small strips.

2. Mix sherry, garlic, soy sauce, sugar and soak chicken in mixture.

3. Cut onions 1", cut mushrooms thin, bamboo shoots and water chestnuts thin.

4. Heat pan and add 1 tablespoon oil and fry nuts real quick then remove to serving dish.

5. Heat pan, add 1 tablespoon oil and stir fry bamboo shoots and water chestnuts for 3 minutes, and remove to dish with nuts.

6. Heat pan, add 1 tablespoon oil, add chicken and stir fry, add broth if it begins to stick. Cook until done then add nuts and all vegetables, 1 to 2 minutes.
