CHICKEN CASHEW CASSEROLE | |
1 (2 lb.) chicken 1 (3 oz.) can Chinese chow mein noodles 1 can cream of mushroom soup 1/4 c. chicken stock 1 c. diced celery 1/4 c. diced onion 1/4 lb. cashew nuts, salted 1/4 tsp. pepper Cook chicken until tender, cut into 1/2" pieces. Set aside 1/2 cup noodles for top. Mix or thin cream of mushroom soup with 1/4 cup chicken stock. In a 1 1/2 quart casserole dish combine all ingredients. Sprinkle with 1/2 cup noodles on top. Bake 40 minutes at 325 degrees. |
