BANANA MUFFINS 
3 cups all-purpose flour
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
2 cups sugar
1 small can crushed pineapple (undrained)
2 cups diced bananas
1 1/2 cups vegetable oil
1 1/2 tsp. vanilla
3 eggs, beaten

Mix first the dry ingredients well. Add pineapple, bananas, oil, vanilla and eggs. Blend well; do not beat. Grease tins or use paper baking cups.

Bake 20 minutes at 350°F for medium size muffins.

Makes about 3 dozen.
