CUCUMBER CINNAMON RINGS 
2 gallon lg. cucumbers, peeled and sliced
2 c. lime, mixed into 2 gallons of water

Soak cucumbers for 24 hours. Drain. Rinse thoroughly. Soak in cold water 1 hour. Drain. In a large kettle, mix 2 cups vinegar, 1 tablespoon alum, 1 small bottle red food color, and enough water to cover cucumbers. Simmer 2 hours. Drain.

Make solution of 2 cups water, 2 cups vinegar, 10 cups of sugar, 8 sticks cinnamon and package of red hot candies (red centers only). Bring to boil and pour over cucumbers. Drain and reheat syrup each day for 3 days. Last day put cucumbers in hot jars, add syrup and seal. If the syrup runs low add a little more vinegar, sugar, and water.
