3 GRAIN BREAD
1 pkg. dry yeast
3 1/4 c. lukewarm water
1/2 c. honey or maple syrup
2 tsp. salt
1/2 c. buckwheat flour
1/2 c. cornmeal
3/4 c. Bran (I used flakes)
1/2 c. salad oil
3 c. whole wheat flour
3 - 4 c. all-purpose flour
1/2 c. dry milk

Dissolve yeast in 1/4 cup of the warm water, in a large bowl. Add remaining water, honey, dry milk, salt, buckwheat flour, cornmeal, bran and whole wheat flour, and enough white flour to make a stiff dough while stirring with wooden spoon.

Turn out on board and knead 5-8 minutes. Raise in oiled bowl (1 - 1 1/2 hours) until double. Then divide into loaves. Raise again 30-40 minutes in bread tins. Bake at 400 degrees for 10 minutes and then at 350 degrees for 30-40 minutes. Loaves are done when they sound hollow if thumped on the bottom.
