MOTHER'S APRICOT PIE 
1 pkg. dried apricots
Water
1/2 to 2/3 c. sugar
3 eggs, separated
1/4 c. butter, melted
1 scant c. sugar
1 c. milk
1/2 tsp. vanilla
Unbaked pie shell

Chop apricots and cook in small amount of water until soft. Add sugar and cook until sugar dissolves and apricots are thick. Put about 3/4 of cooked apricots in bottom of the pie shell. Separate eggs and beat yolks with sugar and melted butter. Add milk slowly and vanilla and bake at 350 degrees for about 45 minutes. Top with meringue made from egg whites, 4 tablespoons sugar, 1/2 tablespoon water. Bake 15 more minutes at 325 degrees.
