WILTED SPINACH 
4 c. spinach
1/2 lemon
1 c. fresh mushrooms
3/4 c. Cheddar croutons
4 tbsp. Ranch dressing
1/4 c. olive oil
1/8 c. red wine vinegar
2 tbsp. sugar
1/2 lb. bacon, cut into pieces and cooked

Clean spinach and break into pieces. Sprinkle with juice of lemon. Add sliced mushrooms, croutons, and Ranch dressing. Toss together. In small saucepan, heat olive oil and vinegar; stir in sugar, then reheat the bacon in this mixture. Pour hot dressing over spinach to wilt. Sprinkle with grated Romano cheese.

Optional: Flame with brandy.
