1 env. unflavored gelatin 2 tbsp. cold water 3 lg. eggs, separated (room temperature) 1/2 c. sugar 2 tbsp. lemon juice 2 tbsp. lemon rind, grated (for garnish) Lemon slices (for garnish) Mint leaves (for garnish) In top of double boiler, soak gelatin in the cold water until gelatin dissolves. Keep warm. In small bowl, beat egg yolks, sugar and lemon juice until pale and foamy. Pour in gelatin in a fine stream. Set aside. In another mixing bowl, beat egg whites until stiff. Fold into lemon mixture. Pour pudding into a mold; cover and chill about 2 hours or until set. Unmold onto serving platter. Sprinkle with grated rind. Garnish with lemon slices and mint leaves. |
