CAPE COD QUICHE | |
Saute in 3 tbsp. oil 1 1/2 c. chopped zucchini 1 1/2 c. sliced mushrooms 3/4 c. chopped green pepper 3/4 c. chopped onion 1 clove garlic Beat 6 eggs and 1 pound cream cheese (diced) until lumpy. Add 1/4 cup lite cream, 1 1/2 cup Cheddar cheese grated and 2 cups stale bread cubes. Fold in sauteed vegetables, 1 teaspoon salt and 1/4 teaspoon pepper. Bake for 1 hour in 350 degree oven. Use 10 inch springform pan. When quiche in slightly cooled, take side off pan and serve on spring form base. |
