PEANUT BUTTER SNACK CANDY | |
3 c. oatmeal 1 c. flour 2 tsp. cinnamon 1/4 tsp. nutmeg 1 tsp. baking soda 2 sticks butter (room temperature) 1 c. peanut butter 1 c. firm pack brown sugar 2/3 c. white sugar 2 eggs 1 tsp. vanilla extract 1 1/2 c. chocolate chips or raisins Mix together oats, flour, cinnamon, nutmeg and baking soda in a large bowl. In a medium bowl with a mixer, beat together butter, peanut butter and two sugars, until light and fluffy, about 4 minutes. Add eggs, one at a time; beat 1 minute after each addition. Add vanilla extract. Mix in oat mixture on low speed until blended. Add chips or raisins. Can chill the dough for 24 hours. Preheat oven to 350°F. Use tablespoon of dough on greased cookie sheet. Bake about 10 to 12 minutes, until golden or firm on edges. |
