LISA'S CHICKEN AND RICE
CASSEROLE
 
4 chicken breasts, skinned
2 c. uncooked white rice
1 onion, sliced
1 bunch of broccoli, cut up
1 can cream of mushroom soup
1 can chicken broth
1 pkg. Lipton onion soup
Sliced whole mushrooms, optional
1/2 c. white wine, optional

Put uncooked rice on bottom of a 9 x 13 inch pan. Place cut up (cubed) chicken on top of rice place onions and broccoli on top of chicken. Add the can of mushroom soup, then chicken broth. Sprinkle dry soup mix on the top. Bake at 250 degrees for 2 1/2 hours.

Oh my stars was this delicious! Kids and hubby ate every bite including the broccoli and asked when we were having this "fancy rice and chicken again!" I used boneless skinless thighs because that's what I had in the freezer. Sauteed the onions and mushrooms before adding. And I left out the wine but substituted lemon juice and a splash more broth. This dish was wonderful and will definitely make again! Thanks so much Lisa!
