CORN FRITTERS 
2 c. self-rising cornmeal
2 c. sugar
1 tbsp. vanilla flavoring
1 c. milk or cream
2 eggs (sm.)
1 c. self-rising flour

Combine ingredients in above order thoroughly. Then empty the contents onto a well floured surface and knead slowly, folding inward - not to exceed 15 times.

Roll entirely into a ball. Then pull off small amounts, rolling them into balls.

Take a medium size frying pan, fill halfway with cooking oil, heat and place small balls of dough into it. Fry, turning occasionally, until brown on all sides, then remove and place on paper towel to drain excess grease.
