EASY REFRIGERATOR ROLLS
2 c. warm (not hot) water
2 pkg. active dry yeast
1/2 c. sugar
2 tsp. salt
1/4 c. soft shortening
1 egg
6 1/2 c. flour

In bowl, dissolve yeast in water. Stir in sugar, salt, shortening and egg. Measure flour by dip level method or by sifting. Mix in flour with hands until dough is easy to handle. Turn onto lightly floured board. Knead until smooth and elastic. Place greased side up in greased bowl. Cover with damp cloth; place in refrigerator. About 2 hours before baking, put fist in middle to let out air, shape dough into rolls, coffee cake, etc. Cover and let rise until double (1 1/2 to 2 hours). Heat oven to 400 degrees. Bake 12 to 15 minutes. Remove with hands.
