1 lb. ground beef 3 1/2 c. canned tomatoes (1 lb. 12 oz. can) 1 c. chopped bell pepper 1/2 c. chopped onion 1/2 c. uncooked rice 1/2 tsp. salt 1/2 tsp. basil 1/8 tsp. black pepper 1/2 lb. Velveeta cheese, sliced cut diagonally Brown ground beef; add tomatoes, pepper, onion, rice, salt, basil and black pepper. Cover and simmer 25 minutes, stirring occasionally. Top with cheese slices which are cut diagonally. Replace cover and heat until cheese has melted. Serves 6. |
