GRAHAM CRACKER CAKE 
2 c. graham crackers, crushed
1/2 c. butter, soft
1 c. sugar
3 egg yolks
2 tbsp. flour
1/4 tsp. salt
2 tsp. baking powder
1 c. milk
1 c. chopped nuts
3 stiffly beaten egg whites
1 tsp. vanilla
1/2 tsp. lemon rind, optional

Cream butter and sugar, add egg yolks, and beat until fluffy. Mix cracker crumbs with sifted flour, salt and baking powder. Add alternately with milk, vanilla, and grated lemon rind. Fold in nutmeats and stiffly beaten egg whites. Bake in greased and floured 8 inch layer cake pan. Bake at 350 degrees for 30 minutes. Remove from pans and cool. Ice with butter cream icing.
