BAKED CATFISH 
1/4 c. cornmeal
1 tsp. dried basil
1 tsp. garlic powder
1/2 tsp. dried thyme
1/2 tsp. salt
1/4 tsp. freshly ground pepper
4 (4 oz.) farm raised catfish fillets
cooking spray

Combine first 6 ingredients in a heavy-duty Ziploc plastic bag. Add fish; seal bag and turn gently to coat. Place fish on baking sheet coated with cooking spray.

Bake on bottom rack of oven at 400°F for 10 minutes on each side. Reduce heat to 350°F and bake 5 minutes or until crust is golden and fish flakes easily when tested with fork.
