EASY FUDGE NUT PIE 
3/4 c. cashews (or peanuts)
2 tbsp. milk
1/2 c. firmly packed brown sugar
2 tbsp. flour
4 tbsp. cocoa or 2 sqs. unsweetened chocolate, melted
3 eggs
1 tsp. vanilla
1/2 c. sugar
1/2 c. butter, softened

In electric blender, grind 1/2 cup of the nuts; chop the remainder of the nuts to be used on top of the pie. Pat ground nuts on bottom and sides of well greased 9 inch round pan. Combine eggs, milk, vanilla, sugars, flour, and butter in the blender. At medium speed, blend for 2 minutes. Add chocolate and blend for another 2 minutes or until smooth. Pour into the pan. Sprinkle top of pie with remaining chopped nuts. Bake at 325 degrees for 40 minutes. Serve warm or cool. Store leftover pie in refrigerator.
