FRENCH ONION SOUP
4 to 5 lg. onions, sliced
1/4 c. butter
3 (13 3/4 oz. each) cans condensed beef broth
1 tbsp. Worcestershire sauce
1 tbsp. soy sauce
Dash of pepper
2 slices bread, toasted, buttered and cut into fourths
Grated Parmesan cheese
8 slices Mozzarella cheese

(You can substitute 4 beef bouillon cubes dissolved in 4 cups boiling water for condensed beef broth.)

1. Combine onion and butter in a 3 quart casserole. Microwave on high for 10-12 minutes or until onions are tender.

2. Add broth, Worcestershire sauce, soy sauce and pepper. Cover with tight fitting lid or plastic wrap.

3. Microwave on high for 12 to 15 minutes or just until soup begins to boil.

4. Garnish each serving with a piece of toast, Parmesan cheese and a slice of Mozzarella cheese.

5. Microwave 4 servings at a time on high for 45 seconds to 1 minute or until cheese begins to melt.

Makes 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
