FIESTA EGGS 
4 salad shells
1 lb. ground beef or pork sausage
1/4 c. green onion, chopped
2 tbsp. red bell pepper, chopped
1 c. Cheddar cheese, shredded
12 eggs
2 tbsp. cold water

Preheat oven to 350 degrees. Prepare salad shells according to package directions. Brown sausage in large frying pan. Add green onion and red pepper. Cook over medium high heat for 5 minutes. Drain sausage mixture. Beat together eggs and cold water. Add eggs to sausage mixture and stir until eggs are cooked (about 3 minutes). Spoon mixture into prepared shells and top with shredded cheese. Place on ungreased baking sheet. Bake at 350 degrees for 3 to 5 minutes or until cheese is melted.
