TOM'S TEXAS CHILI 
3 lbs. ground beef or stew meat
1 lg. onion, chopped
4 cloves of garlic
1 can tomato sauce or 1 qt. canned tomatoes
Cayenne pepper or hot sauce to taste
5 tbsp. chili powder
1 tbsp. cumin powder
1 tsp. salt

Chop onion and press fresh garlic, set aside. Brown meat in a heavy, preheated Dutch oven. When meat stops "sizzling", add onion and garlic and simmer until onion becomes transparent. Drain meat to remove excess grease and return to heat. Add chili powder, ground cumin, salt and tomatoes.
