GREEK BREAD 
1/4 c. sugar
2 tbsp. salt
4 c. lukewarm water
2 pkg. dry yeast
1/4 c. shortening
12 1/2 c. flour

Add sugar and salt to water, proof yeast. Add flour 2 cups at a time. Add shortening as flour is being added. Turn onto floured board and let rest 10 minutes. Knead until smooth. Turn into greased bowl, place in preheated 175 degree oven. Turn off oven and let raise 1 1/2 hours. Place on 14 inch pizza pan. Let rise 1 1/2 hours, covered.

Bake at 375 degrees for 1 hour. Brush with butter if desired, then with beaten egg white and sprinkle with sesame seeds. Let cool slightly before serving warm.
