CREOLE BAKED CHICKEN | |
2 to 2 1/2 lb. cut up frying chicken 2 envelopes "Shake 'n Bake" seasoning coating mix (barbecue style) 2 lg. Bermuda Spanish onions, cut into 1/2-inch strips 2 lg. green peppers, cut into strips 1 (20 oz.) can chunk pineapple, well drained Wash chicken pieces and pat dry, but slightly moist. Empty coating mix into shaker bag. Shake 2-3 pieces of chicken at a time in the bag until evenly coated. Spread onion slices and green peppers in a 13 x 9-inch pan. Top with the chicken pieces and sprinkle any remaining seasoning mix evenly over the chicken. Bake in 350 degree oven for 50-55 minutes. Add chunk pineapple to mixture after removing chicken to serving platter. Spoon vegetables around chicken, stir the remaining sauce in pan to blend and spoon over vegetables. Serve over rice if desired. Serves 4. |
