TAFFY APPLE SALAD 
1 c. salted Virginia peanuts
4 c. red or Golden Delicious apples, peeled & diced
8 oz. can crushed pineapple, drained, save juice
1/2 c. sugar
1 tbsp. flour
2 tbsp. apple cider vinegar
1 egg
Juice from pineapple
8 oz. container Cool Whip

Combine sugar, flour, apple cider vinegar, egg and pineapple juice and cook to make a custard; cool. Then fold into Cool Whip. Fold in apples and pineapple into custard mixture. Just before serving fold in peanuts. Salad can be made a day ahead without the peanuts (fold in peanuts just before serving).
