SWEET POTATO CASSEROLE | |
2 15 1/2 oz. can of mashed sweet potatoes 1 c. sugar 2 eggs 1 tsp. vanilla extract 1/3 c. milk 1/2 c. butter Combine above ingredients. Beat with electric mixer until smooth. Spoon into greased 3 qt. casserole. Topping: 1 c. brown sugar, firmly packed 1/3 c. all purpose flour 1/3 c. butter (softened) 1 c. pecans, finely chopped Combine above ingredients, stir and mix well. Crumble on top of sweet potato mixture. Bake at 350°F for 45 to 50 minutes. Serves 10-12. |
