SHORTBREAD RASPBERRY BARS 
1 1/4 c. flour
1/2 c. sugar
1/2 c. butter
1/3 c. raspberry jam, more if desired
2 lg. eggs
1/2 c. brown sugar
2 tbsp. flour
1 tsp. vanilla
1/8 tsp. salt
1/8 tsp. baking soda
1 c. chopped walnuts or pecans

Combine flour and sugar. Cut in butter until mixture is like fine meal. Press over bottom of lightly greased 9 inch square pan. Bake for 20 minutes in 350 degree oven, just until edges are tinged with brown. Spread jam over shortbread.

Beat eggs with brown sugar. Add flour, vanilla, salt, baking soda and nuts. Spoon over jam and spread lightly to corners of the pan. Return to oven and bake 22-25 minutes longer, until top is set. Cool and cut into bars.
