UNDER THE SEA SALAD 
1 pkg. lime Jello
1 1/2 c. boiling water
1/2 c. juice from lg. can pears
1/4 tsp. salt
1 tsp. vinegar
2 pkg. cream cheese (6 oz.)
1/8 tsp. ginger (optional)
2 c. canned pears, diced

Dissolve Jello in boiling water. Add pear juice, salt and vinegar. Pour 1/2 inch layer into loaf pan. Chill until firm. Chill remaining Jello mixture until cold and syrupy. Place in bowl of cracked ice or ice water and whip with rotary egg beater until fluffy and thick like whipped cream.

Cream cheese (with ginger if desired). Fold in whipped Jello mixture gradually. Then fold in pears. Pour over firm first layer of Jello. Chill until firm. Unmold. Serves 10.
