SKILLET HAM-POTATO SALAD 
1/4 c. chopped green onions
1/4 c. chopped green pepper
1 (12 oz.) can chopped ham, diced
1 tbsp. fat
3 c. cooked cubed potatoes
1/4 tsp. salt
Dash pepper
1/4 c. mayonnaise or salad dressing
1/2 lb. sharp American cheese, shredded (1 1/2 c.)
2 tbsp. chopped parsley

Cook onions and green pepper and meat in hot fat, stirring occasionally until meat is lightly browned. Add potatoes, salt and pepper and mayonnaise. Heat, mixing lightly. Stir in cheese and heat just until it begins to melt. Sprinkle with parsley. Makes 4 servings.
