BELGIAN WAFFLES 
2 c. flour plus 2 tbsp.
2 tbsp. confectioners sugar
1 tbsp. vegetable oil
2 tsp. vanilla
3 eggs, separated
2 tsp. baking powder
2 c. milk
pinch of salt
fresh fruit topping (optional)

Combine all ingredients except egg whites. Beat egg whites until stiff and fold into batter. Pour 1/2 cup measure into waffle iron.

Bake about 2 minutes. Top with fruit or syrup.

Makes 8 waffles.
