ZUCCHINI LASAGNE 
3/4 lb. ground beef
1/4 c. grated carrot
1 c. cottage cheese
6 oz. Mozzarella cheese
1 (16 oz.) can tomato sauce
1/2 tsp. basil
1/2 tsp. Italian seasoning
1/2 c. chopped onion
4 or 5 zucchini, unpeeled
1 egg
1/2 c. diced green pepper
1/2 tsp. oregano
1/2 tsp. garlic powder
Salt to taste

Brown ground beef; drain. Add onion, garlic, pepper, carrots, tomato sauce and seasonings. Simmer 10 minutes, stirring often. Layer greased baking dish with sliced zucchini; beat eggs and cottage cheese. Spread over above. Top with part of meat sauce and half Mozzarella cheese. Bake 40 minutes at 350 degrees.
